Menu Plan Monday

Pete was away in Pennsylvania last week for work so I didn't make a menu plan. The boys and I got went out to dinner a couple of times(thank you Groupon and Living Social) and just enjoyed some simple meals at home. We were very happy to have Pete come home on Friday night and instead of takeout, had a nice family meal of beef parmesan and garlic mashed potatoes, Yum!! I got the new Pioneer Women cookbook from the library this weekend(Oh, how I love that place) and my mouth was quickly watering!! Pete and I are both fans of hers(He'd love a spot at her table)I quickly decided to add a few of her recipes to our dinners this week!

Monday:The Best Burgers
Tuesday: Fried Chicken Tacos(Pioneer Women)
Wednesday: Pasta with Tomato Cream Sauce(Pioneer Women)
Thursday: I'm going out! My guess is the boys will have Omelets, they love them, I don't!
Friday: Takeout!

Breakfast Playdate

While the daddies were fishing this morning, Peter, Jack and Mackenna enjoyed a breakfast playdate of blueberry biscuits and fruit salad! We always enjoy our time spent with them!

Chicken Alfredo

 This family loves alfredo! The meal at the Olive Garden is one of our favorites. Pete was online last week and found a website called Budget101 and discovered they had a bunch of copy cat recipes including the Olive Garden's alfredo sauce. We gave it a try, what a super easy meal to make! We also added grilled chicken to have some protein :)

Copycat Alfredo Sauce with Grilled Chicken
1lb Fettuccine
1 pt heavy cream
1 stick butter
2 T cream cheese
1/2 to 3/4 c Parmesan cheese
1 tsp garlic powder
4 Chicken Breasts
salt & pepper to taste


Directions:
While pasta is cooking,
Grill some chicken.....
in a saucepan melt butter....
then stir in heavy cream, and cream cheese. Simmer this until all is melted, and mixed well.
Add the parmesan cheese and garlic powder. Simmer this for 15 to 20 min on low.....can be left on low longer, just watch it and stir.  
place pasta onto plate, slice chicken into strips and add to top of pasta. Pour sauce over pasta and chicken, then enjoy!

Sandbox Project

I really wanted a sandbox for the boys. They both love to dig! I knew all the daycare kids would get a lot of enjoyment from it as well.  All the sandboxes you can buy seem so small. Most didn't get good reviews because you could only fit one or two small kids in them. I wanted something the boys could enjoy for years. So a few Sundays ago we took a trip to Home Depot to get all the supplies. Pete drew out a plan before we left the house.

We used composite decking so that the kids wouldn't have to worry about splinters!
One of the biggest concerns we had with building the sandbox was a proper cover, one that would be easy to take on and off but now blown away in a storm. Pete came up with this idea, so thankful to have such a handy man. PS... how cute is my husband, LOL! Proud of his work :)
Pete drilled a hole in the cover and got some rope from the garage to make a handle so it would be easier for me to lift!
Hinges so we don't have to worry about tarp or another kind of weak cover. Another great idea Pete!
Staining the cover with Thompson's Water Seal Natural Cedar. Gave it that Cedar look.
Peter with the finished sandbox!!! Now we just need to move it out back and fill it with sand!
Cynthia and Joe came over to help us move it out back, it was heavy!
Excited to pan dirt like the one of his favorite shows "Gold Rush"!
Yay, I can dig!

Peter's 3rd Birthday Questions

I found this last week and decided this was the perfect year to start this! With it being just a few weeks after his birthday. I will start it with Jack when he is 3. Lola's First Communion

We woke up early again this weekend to head to another party!! This time we headed south, to Abington to watch Lola recieve her first communion and to celebrate with a great party after! When you're going to a party planned by Laura, you know you won't be dissapointed!
Laura turned the backyard into a beautiful party area! For more decorating photos, check out her blog!

The food was catered by the Village Manor. If you are ever in the Dedham area, stop in! Meatballs, Blackend Chicken Alfredo, Buffalo tenders, were my favorites! Try it all!

Cameron's First Birthday Party

On Saturday we headed up to Waterville to celebrate Cameron's 1st birthday with a pirate themed party! We got up there early so we would have some time in the morning with them before the party started. The weather was nice and we spent almost the whole day outside! Jenny & Cynthia did a great job with the cake!
